HEALTH IN A JAR – CRUSHED SEA BUCKTHORN WITH SUGAR

Raspberry and sea buckthorn preserves are used as cold remedies in Moldova. We also kept this kind of cold remedy in our house, thanks to our neighbors who had a sea buckthorn plant in their yard; they were kind enough to share the berries with us. I prefer to use sea buckthorn in my hot beverages as a preventive measure for winter bugs. Inspired by some Canadian sea buckthorn dishes, I may experiment and use it in marmalade, jelly and sauces.

 1 kg sea buckthorn
 1.20 kg sugar / honey

Remove the berries from the twigs, wash thoroughly and purée in a blender.

Add sugar or honey. It must be sweet enough to prevent it from fermenting.

Pour the sea buckthorn into jars and keep refrigerated.

CRUSHED SEA BUCKTHORN WITH SUGAR

If you are longing for summer during those cold winter days, just add some tablespoons of sea buckthorn preserve in a cup, pour hot water over it, add some mint leaves and enjoy.
