WATERMELON AND BRÂNZA – A DELICIOUS MOLDOVAN COMBO

Starting with the end of July and till the middle of October, watermelons are an inseparable element of the Moldovan landscape.
Travelling through the country you’ll inevitably notice on the roadside tens of farmers selling their sweet harvest.
Stop by, go into the field, choose any watermelon you like and discover the local hospitality.
Usually, to make sure you bought the sweetest watermelon and maybe to convince you to buy more, the farmers will cut a slice and will share it with you.
Wait! Slow down, inhale-exhale. This fragrance will remind you of your childhood favorite chewing gum Hubba Bubba. Watermelon is our favorite summer dessert. We keep it simple – no special dishes with watermelon. Besides the traditional pickled watermelon! Yes, I know for some of you it may sound weird. But this is because you never tried it before.
My dad loves eating watermelon with fresh bread. I know people also love eating it with a bread slice covered with butter or with a brânza – the local sheep feta.

I love this salad, because it represents a combination of the most popular ingredients: watermelon, brânza and onion. In Moldova the seedless watermelon are not very common so please don;t forget to remove the seeds.

 1 watermelon , chilled
 1 cucumber
 1 red onion
 200 g crumbled brânză (sheep's milk feta)
 5 sticks fresh mint leaves, chopped
 3 whole limes, juiced
 50 ml extra virgin olive oil
 2 pinches salt and pepper

This salad is best made one hour or less before your meal. Make as much as you think will be eaten, because it's not good to save as a leftover for next day.

Cut rind from the watermelon, then chop the fruit into chunks.

In a small bowl, whisk together olive oil, lime juice, salt and pepper. Combine watermelon, cucumber, feta, red onion, and mint. Pour over dressing, tossing to combine.
