Raspberries are not just for sweet recipes. Besides jams and dessert, you may use them in marinades or sauces for main dishes. Try this Raspberry Balsamic Glazed Salmon. My honest advice is : Double the portion of the raspberry sauce. It is so good that you'll need more. And don't underestimate the fresh thyme. It gives such a special flavor to this dish.

You don't have to make a shopping list. Everything is your fridge or drawer.
In a small saucepan over medium-low heat, add ghee or butter. Add garlic and cook, stirring continuously, for 30 seconds. Take care, don't burn the garlic!
Add dates, balsamic vinegar and raspberries. Cook, stirring occasionally, until sauce is thickened – about 5-6 minutes
Remove from heat, add the chopped thyme and salt.
You can strain sauce through a fine mesh strainer to remove seeds. But I prefer to not do it as you loose a lot of sauce.
Place salmon fillets on a baking sheet, sprinkle each filet with salt and pepper. Brush each fillet abundantly with raspberry sauce.
Broil salmon for about 12 minutes.
Serve it with your favorite side dish: rice, mashed potatoes, asparagus or quinoa.
