My parents and their friends had a tradition: on every 9th of May they used to celebrate the Victory Day by going to the same forest. We were doing the traditional 9th of May BBQ. Also kids were picking up ramson and lilies of the valley. Even today, when I smell these wonderful flowers I quiver with nostalgia over those magical childhood days.
Wash, drain and roughly chop the ramson. Place it in a bowl. Peel the eggs, cut into quarters and throw them over the ramson.
Peel the cucumbers and remove the ends of the radish. Slice everything into rounds.
Dice the fresh cheese, choose a semi-soft white sheep cheese. Spread evenly the cucumbers, the radishes and the cheese over the wild garlic.
For the dressing you will need sour cream, olive oil, mustard, the juice of ½ a lemon, salt and pepper. Drizzle it over the salad and serve right away.
