There is nothing more delicious or dearer to the Moldovan soul than a summer salad made in the right way. There comes a moment when parents in Moldova will decide to plant a small garden with produce you would usually buy at a farmers’ market. A lot of us, lucky kids with such hardworking parents, then have the opportunity to eat summer fruits and vegetables directly from the garden – sweet and juicy tomatoes, crunchy sweet peppers and flavorful cucumbers. Mix all of these nature’s wonders in a bowl, sprinkle with fresh parsley, dill and scallions, add a slice of traditional soft sheep’s cow cheese over a slice of brown bread and be ready for a true explosion of flavors. Oh, and let’s not forget about the sunflower oil, made at the traditional mill from the village. So good that you will lick your fingers!
