This is a quick and simple recipe my mother used to resort to when had to stay late at work. She was calling home and asking to place the potatoes into the oven.
When mommy arrived home, the potatoes were almost done. What is the most exciting about this recipe? All the ingredients you can add in addition. You can combine them with a wide variety of dishes.
For delicious baked potatoes, choose those with an elongated shape. Wash, dry and arrange them on a tray.
Pierce each potato with a toothpick with a slice of bacon on top of it. Cover the tray with a heat-resistant glass bowl and place it in the pre-heated oven. Bake at 180-200oC.
The bacon fat will dribble on the potatoes giving them a special taste. Check for readiness with the help of a toothpick.
Serve with sheep cheese, canned fish, salad and a cool beer for a final touch!
