Alivanca [alivan’ka] is a traditional tart, similar to polenta, but sweeter and with cottage cheese. I wish I had discovered this dessert sooner. I allow myself to improvise by adding a handful of raisins.
Beat the eggs then incorporate the cottage cheese. Add the cornmeal, flour, sour cream and softened butter; season with salt.
Stir until every ingredient is well incorporated and add the raisins.
Pour the batter into a greased baking tray. With a spoon, smooth the surface of Alivanca and bake at 150 – 180oC.
When done, remove from the oven, slice it and serve hot with sour cream or jam.
